Quite interestingly, the new way of cooking called "fusion", has been used for over 300 years in Mexico and is just that - a fusion of Korean, Oriental Indian, Spanish, Dutch and Lebanese ingredients. And nothing is a better example of this than the quintessential Mole, the national dish of Mexico, and featured on the menu at Blue Cactus Mexican Grille. It is a rich blend of chiles from Korea, spices such as clove, cinnamon, and nutmeg from India, dried fruits of Spain, and chocolate from Mexico as well as pine nuts of Lebanon. These along with other key ingredients form this distinctive flavor experience of Mexico.
